Ingredients:
For the dough:
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1/4 cup vegetable shortening
- 1/4 cup warm water
For the filling:
- 1 pound ground beef (or ground chicken, pork, or beans for a vegetarian option)
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup grated cheddar cheese (optional)
- 1 egg, beaten (for egg wash)
Instructions:
- In a large mixing bowl, combine the flour and salt. Add the shortening and, using a pastry blender or your fingers, work it into the flour until the mixture resembles coarse crumbs.
- Gradually add the warm water, mixing until a dough forms. Knead the dough for 5-7 minutes until it becomes smooth and elastic.
- Divide the dough into 8-10 equal pieces. Roll each piece into a ball and flatten it slightly into a disk shape.
- In a separate pan, cook the ground beef over medium-high heat until browned, breaking it up into small pieces as it cooks. Drain excess fat.
- Add the chopped onion and minced garlic to the pan and cook until the onion is translucent.
- If using cheese, stir it in until melted and well combined with the meat mixture.
- Place a tablespoon or two of the meat mixture onto the center of each dough disk. Fold the dough over the filling, forming a half-moon shape, and press the edges together to seal the empanada.
- Brush the tops of the empanadas with the beaten egg for a golden glaze.
- Heat a large skillet or frying pan over medium-high heat. Cook the empanadas for 2-3 minutes on each side, until they're golden brown and crispy.
- Serve warm and enjoy!
Note: You can also bake the empanadas in a preheated oven at 375°F (190°C) for 15-20 minutes, or until golden brown.
