- Drag the Mail app to the Trash icon in the Dock.

- Scroll down and tap on "Mail."
- Tap on "Accounts" and select the email account you want to remove.
- Tap on "Delete Account" and confirm that you want to delete the account.
- Go back to the Mail settings and tap on "Default Account" to select a new default email account.

Additional steps:
- If you're using iCloud Mail, you may need to remove the account from your iCloud settings as well. To do this:
- Go to the Settings app on your iPhone or iPad.
- Tap on "iCloud."
- Tap on "Mail" and toggle off the switch next to "Mail" to disable the account.
- If you're using a third-party email service (e.g., Gmail, Outlook) and you want to remove the account from Apple Mail, you'll need to go to the settings for that service and remove the account from there as well.
- If you're using a Microsoft Exchange account and you want to remove it from Apple Mail, you'll need to go to the Settings app on your iPhone or iPad, tap on "Mail," and then tap on "Accounts" to remove the account.
Note: Removing Apple Mail will not delete your email messages or accounts. Your email messages will still be stored on your email provider's servers, and you can access them using a web-based email client or another email app.
