Ismailian anoush

Ismailian Anoush (also spelled as Anush or Anoush) is a popular Assyrian dish that originated from the Assyrian community in Iraq. It's a type of stuffed grape leaves dish, similar to the more well-known Dolma.
Here's a brief overview of the dish:
Ingredients:
- Grape leaves (usually fresh or jarred)
- Rice
- Ground meat (usually beef or lamb)
- Onions
- Spices (e.g., cumin, coriander, paprika)
- Salt and black pepper
- Olive oil
Preparation:
- Prepare the grape leaves by blanching them in boiling water for a few seconds to make them pliable.
- Mix the ground meat with cooked rice, chopped onions, spices, salt, and black pepper.
- Lay a grape leaf flat on a work surface, with the stem end facing you.
- Place a tablespoon or two of the meat mixture in the center of the leaf.
- Fold the stem end over the filling, then fold in the sides and roll the leaf into a neat package.
- Repeat with the remaining grape leaves and filling.
- In a large pot, heat some olive oil over medium heat. Add the rolled grape leaves, seam-side down, and cook until they're lightly browned.
- Add enough water to the pot to cover the grape leaves and bring to a boil.
- Reduce the heat to low and simmer, covered, for about 20-25 minutes, or until the grape leaves are tender.
Serving:
Ismailian Anoush is often served as an appetizer or side dish, accompanied by a squeeze of lemon juice and a sprinkle of sumac. It's a flavorful and aromatic dish that's perfect for special occasions or family gatherings.
