Ismailian anoush

Ismailian Anoush (also spelled as Anush or Anoush) is a popular Assyrian dish that originated from the Assyrian community in Iraq. It's a type of stuffed grape leaves dish, similar to the more well-known Dolma.

  1. Prepare the grape leaves by blanching them in boiling water for a few seconds to make them pliable.
  2. Mix the ground meat with cooked rice, chopped onions, spices, salt, and black pepper.
  3. Lay a grape leaf flat on a work surface, with the stem end facing you.
  4. Place a tablespoon or two of the meat mixture in the center of the leaf.
  5. Fold the stem end over the filling, then fold in the sides and roll the leaf into a neat package.
  6. Repeat with the remaining grape leaves and filling.
  7. In a large pot, heat some olive oil over medium heat. Add the rolled grape leaves, seam-side down, and cook until they're lightly browned.
  8. Add enough water to the pot to cover the grape leaves and bring to a boil.
  9. Reduce the heat to low and simmer, covered, for about 20-25 minutes, or until the grape leaves are tender.

Ismailian Anoush is often served as an appetizer or side dish, accompanied by a squeeze of lemon juice and a sprinkle of sumac. It's a flavorful and aromatic dish that's perfect for special occasions or family gatherings.
