Mary Berry's Sausage Casserole Recipe

Ingredients:

• 500g sausages (any type you like, but Mary recommends using a mix of pork and Cumberland)
• 1 large onion, chopped
• 2 cloves of garlic, minced
• 1 large carrot, peeled and chopped
• 1 large potato, peeled and chopped
• 1 cup of chicken or vegetable stock
• 1 cup of milk
• 2 tablespoons of tomato paste
• 1 teaspoon of dried thyme
• Salt and pepper to taste
• 2 tablespoons of butter
• 1 cup of grated cheddar cheese (optional)

Instructions:

1. Preheat your oven to 180°C (350°F).
2. Cook the sausages in a large pan over medium heat, breaking them up with a spoon as they cook, until they're browned and cooked through. Remove from heat and set aside.
3. In the same pan, add the chopped onion, garlic, carrot, and potato. Cook over medium heat, stirring occasionally, until the vegetables are tender and lightly browned.
4. Add the stock, milk, tomato paste, and thyme to the pan. Stir to combine, then bring to a simmer.
5. Add the cooked sausages back into the pan and stir to coat with the sauce.
6. Transfer the mixture to a large casserole dish and dot the top with butter.
7. If using cheese, sprinkle it over the top of the casserole.
8. Bake in the preheated oven for 25-30 minutes, or until the casserole is hot and the cheese is melted and golden brown.
9. Serve hot, garnished with fresh parsley or thyme if desired.
