Mary Berry's Sausage Casserole Recipe
Ingredients:
- 500g sausages (any type you like, but Mary recommends using a mix of pork and Cumberland)
- 1 large onion, chopped
- 2 cloves of garlic, minced
- 1 large carrot, peeled and chopped
- 1 large potato, peeled and chopped
- 1 cup of chicken or vegetable stock
- 1 cup of milk
- 2 tablespoons of tomato paste
- 1 teaspoon of dried thyme
- Salt and pepper to taste
- 2 tablespoons of butter
- 1 cup of grated cheddar cheese (optional)
Instructions:
- Preheat your oven to 180°C (350°F).
- Cook the sausages in a large pan over medium heat, breaking them up with a spoon as they cook, until they're browned and cooked through. Remove from heat and set aside.
- In the same pan, add the chopped onion, garlic, carrot, and potato. Cook over medium heat, stirring occasionally, until the vegetables are tender and lightly browned.
- Add the stock, milk, tomato paste, and thyme to the pan. Stir to combine, then bring to a simmer.
- Add the cooked sausages back into the pan and stir to coat with the sauce.
- Transfer the mixture to a large casserole dish and dot the top with butter.
- If using cheese, sprinkle it over the top of the casserole.
- Bake in the preheated oven for 25-30 minutes, or until the casserole is hot and the cheese is melted and golden brown.
- Serve hot, garnished with fresh parsley or thyme if desired.
