- Salt and black pepper, to taste
- 2 cups water

Instructions:
- Heat the olive oil in the bottom of a large clay tajine or a Dutch oven over medium heat.
- Add the lamb or beef and cook until browned, about 5 minutes. Remove from the pot and set aside.
- Add the onions, garlic, carrot, and potato to the pot. Cook until the vegetables are tender, about 10 minutes.
- Add the dried fruits, cumin, coriander, cinnamon, turmeric, salt, and black pepper to the pot. Stir to combine.
- Add the browned meat back to the pot and stir to combine with the vegetables and spices.
- Add the water to the pot and bring to a boil.
- Reduce the heat to low and simmer, covered, for 1 1/2 hours, or until the meat is tender.
- Serve the tajine hot, garnished with chopped parsley or cilantro, if desired.
