Donkey Mail's Scampi Recipe!
For those who may not know, Donkey Mail is a popular food blog that shares delicious and easy-to-make recipes. Their Scampi recipe is a fan favorite, and I'm excited to share it with you!
Donkey Mail's Scampi Recipe
Servings: 4-6
Ingredients:
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1/4 cup white wine (optional)
- 1/4 cup freshly squeezed lemon juice
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- Fresh parsley, chopped (optional)
Instructions:
- Rinse the shrimp under cold water and pat them dry with paper towels.
- In a large skillet, melt 1 tablespoon of butter over medium-high heat. Add the garlic and sauté for 1-2 minutes, until fragrant.
- Add the shrimp to the skillet and sauté for 2-3 minutes per side, until they're pink and cooked through.
- Remove the shrimp from the skillet and set them aside on a plate.
- Reduce the heat to medium and add the remaining 1 tablespoon of butter to the skillet.
- If using white wine and lemon juice, add them to the skillet and stir to combine. Bring the mixture to a simmer and cook for 2-3 minutes, until the liquid has almost completely reduced.
- Add the paprika, salt, and pepper to the skillet and stir to combine.
- Return the shrimp to the skillet and toss them in the sauce to coat.
- Serve the scampi hot, garnished with chopped parsley if desired.
Tips and Variations:
- For an extra burst of flavor, add some chopped fresh parsley or dill to the sauce before serving.
- If you prefer a lighter sauce, reduce the amount of butter and wine/lemon juice.
- You can also add some diced onions or bell peppers to the skillet with the garlic for added flavor.
- For a spicy kick, add some red pepper flakes to the sauce.
